Instead of bothering to chop carrots, I steamed frozen corn and sweet peas. Instead of heating the yogurt, I went "cold process". The veggies were all ready, and the pasta was cooked. After tossing the pasta with a teaspoon of olive oil and some parsley flakes, I added the chicken (well drained) and veggies, then folded in the yogurt. I added garlic powder, too.
That made supper, plus breakfast and lunch for tomorrow! The book says this makes 2 servings, but those are very big (to me, anyway) servings.
Oh, yes, and my century training. This morning I tried to stay over 16 mph as much as I could. I wound up averaging 14.35 mph, in part because of having to slow down a lot while riding over a gravelly crossing. Because I was trying to sustain a good pace, I decided to make this morning's ride short. Yesterday I was pushing it pretty hard, doing two-minute intervals of working to sustain a cadence of 85-92 while in a harder gear.
And now I must shift gears and go wash up from my latest venture into the Zone.
